Late-Summer Peach & Burrata Caprese
Every year there's a two-week window when peaches and the last of the summer tomatoes overlap at the market, and this salad is the whole reason to show up early. Torn burrata pools into the honey, the peaches go soft against the cold cheese, and a crack of black pepper keeps the whole thing from tasting like dessert.
Method
Arrange the base
Overlap the peach and tomato slices on a wide, shallow platter, alternating colors as you go.
Add the burrata
Tear the burrata into rough pieces and nestle them into the gaps between the fruit.
Dress it
Drizzle the olive oil, honey, and balsamic evenly across the platter.
Finish and serve
Scatter basil leaves on top, finish with flaky salt and a generous crack of black pepper, and serve right away at room temperature.
Kitchen notes
Look for peaches that give slightly under your thumb — a rock-hard peach won't soften into the cheese the way this salad wants it to. No burrata at your market? Fresh mozzarella works, just tear it a little smaller.
